2007 Nuit Blanche -Rosomel Vineyard
Rich, golden straw colour. Complex nose with aromas of ruby grapefruit, papaya, smokey minerality and roasted hazlenuts. The 2007 Nuit Blanche has a rich mouth feel with sweet fruit characters and a lingering finish. The wine shows refined aromas of papaya, guava fruit, Chinese allspice and smokey minerality.
We exposed all bunches to sunlight at fruit set with leaf removal on both sides of the canopy to maximize fruit ripening. Green harvest was performed at the first sign of veraison and we only left the best bunches that were well exposed to sunlight in order to promote ripening, concentration of flavours and the expression of terroir.
The grapes were hand picked, hand sorted and whole bunch pressed. The juice was cold settled for 48-72 hours and then racked. The juice was warmed and then transferred to the barrels. The wine was fermented with native yeasts with ferments being allowed to reach 24-26 degrees Celcius. All the barrels were stirred weekly during ageing. The wine was blended in August 2008 and filtererd before bottling.
