2007 Locust Lane Riesling
Brilliant appearance with pale yellow straw colour. Attractive nose with fresh lime, pink grapefruit, honey pomello and white flowers. The palate is fresh with beautiful Riesling purity and seamlessness. The wine has a fleshy texture and shows intense flavours of pink grapefruit, wild honey and preserved lime with a great dry finish.
We exposed all bunches to sunlight at fruit set with leaf removal on the East side of the canopy to maximize fruit ripening. Green harvest was performed at the first sign of veraison and we only left the bunches that were well exposed to sunlight to promote ripening, concentration of flavours and expression of the Beamsville Bench terroir.
The grapes were handpicked, sorted and lightly whole bunch pressed. After 21 days of cold settling, then fermentation, the juice was then racked and warmed to 20 degrees Celsius. It took three weeks for the native yeast to start fermentation and fermentation lasted 3.5 months. The wine was then filtered before bottling.
