Deep and bright garnet red colour with a concentrated and lifted nose of wild berries, sour cherries, white peach and luscious apricot. Rich and full palate of raspberry, mulberry and rhubarb which has a fleshy and luscious palate. This wine shows great balance with a generous and seamless finish.
WINEMAKING COMMENTS:
15% of the juices from every batch of Pinot Noir was drained from the skins after 2-5 days of cold soak to extract the right amount of colour, flavours and structure. It was then cold settled for two days before racking. The juice was fermented at cold temperatures in a stainless steel tank.
The Malbec juice was bled after 48 hours on skin and the non-clarified juice was added to the fermenting Pinot Noir. The Malbec added colour, weight and structure to the blend. It also contributed to the complexity and the intensity of this lovely fruit-driven wine.
The Viognier component was later added as juice to the fermenting wine and has greatly contributed to the complexity and lusciousness and helps to lift the beautiful nose of this wine.
