Brilliant appearance with pale yellow straw colour. Restrained aromatics with a hint of fresh lime, honeysuckle and flint. The palate is vibrant and shows great depth of flavours with a concentrated core of lime, candied citrus and well developed minerality. This austere wine has great finesse, power and is beautifully balanced with extraordinary length that showcases the terroir of the legendary Rosomel Vineyard.

Winemaker's Comments

We exposed all bunches to sunlight at fruit set with leaf removal on the East side of the canopy to maximize fruit ripening. Green harvest was performed at the first sign of veraison and we only left the bunches that were well exposed to sunlight to promote ripening, concentration of flavours and expression of the Beamsville Bench terroir.

The grapes were handpicked, sorted and lightly whole bunch pressed. After 21 days of cold settling, then fermentation, the juice was racked and warmed to 20 degrees Celsius to induce natural fermentation. It took three weeks for the native yeast to start fermentation and fermentation lasted 3.5 months. The wine was then filtered before bottling.
