2007 Felseck Vineyard Riesling

Brilliant appearance with pale yellow straw colour coupled with a rich, ripe nose of cashew, honey pomello, lime confit and lemon curd. The palate has great weight, fleshiness and the wine shows an intense minerality that showcases the terroir of the Felsck vineyard. The wine has a persistent, long finish with flavours of lime confit.


We exposed all bunches to sunlight at fruit set with leaf removal on the East side of the canopy to maximize fruit ripening. Green harvest was performed at the first sign of veraison and we only left the bunches that were well exposed to sunlight to promote ripening, concentration of flavours and expression of the Beamsville Bench terroir.

The grapes were handpicked, sorted and lightly whole bunch pressed. After 21 days of cold settling, then fermentation, the juice was racked and warmed to 20 degrees Celsius to induce natural fermentation. It tok three weeks for the native yeast to start fermentation and fermentation lasted 3.5 months. The wine was then filtered before bottling.
